Basbousa | Recipes

Basbousa is a sweet cake originating from Egypt flavoured with almonds and semonlina.

Basbousa with almond

  • Preparation time: 30 minutes
  • Cooking time: 50 minutes
  • Serves: 36

Ingredients

  • 200g melted butter
  • 1 tin /397g sweetened condensed milk
  • 1½ tsps baking powder
  • 320g semolina
  • 100g ground almonds
  • 250ml water

For the syrup:

  • 400g sugar
  • 375ml water
  • 1 tsp lemon juice
  • 1 tblsp rose water
  • 2 tblsp ground almonds

How to prepare basbousa

  1. Combine butter, sweetened condensed milk and baking powder and stir well. Add semolina, ground almond and water and stir until well combined.

  2. Pour and level mixture into 28cm x 24cm baking tin. Bake in a 190°C preheated oven for 35 minutes or until top is golden.

  3. Remove from oven and pour all over the cooled syrup. Place in fridge to cool completely, cut into diamond shape and serve.

To prepare the syrup:

  1. Add sugar and water to a saucepan. Bring to boil and simmer for 6-8 minutes.

  2. Remove from heat and stir in lemon juice, rosewater and ground almond.
