Rosemary Conley's Cranberry Rock Cake

Serves 12

Ingredients

  • 225g (8oz) self-raising flour
  • 75g (2 ½oz) low-fat margarine
  • 25g (1oz) Half Spoon sugar
  • 100g (3 ½oz) dried cranberries
  • 1 egg, beaten
  • 1-2 tbsp milk 

How to Prepare

  1. Preheat oven to 190°C, 370°F, Gas Mark 5.
  2. Lightly grease a baking tray.
  3. Sieve flour into large bowl.
  4. Add margarine and rub in until mixture resembles breadcrumbs.
  5. Stir in sugar and cranberries.
  6. Add egg and stir in milk until mixture is stiff.
  7. Place small rocky piles of mixture onto baking tray.
  8. Bake for 20-25 minutes until golden brown and set.
  9. Remove from oven and leave to cool on cooling tray.
